Dietitians take flexible stance on vegetarianism

The Miami Herald ran an article that I believe makes a good point on moving into a healthier lifestyle. 
The article by Jennifer LaRue Huget gives advice that makes great sense.   It talks about the fact that when people realize how much actual control they have over their own life, including their own health, feeling of well-being, and even the way their skin looks-through their diets, they find vegetarianism very empowering.
It goes on to quote Dawn Jackson Blatner author of the Flexitarian Diet, as giving the advice that meat eaters do not have to go cold turkey: rather they should use meat as a condiment as they do in Asian cultures. Instead of filling half your plate with animal protein  fill it primarily with vegetables and grains. They are mostly made of  fiber which will make you far healthier.

Remember there are so many grains out there to try. Perhaps You might want to buy the cookbook The Splendid Grain. It will show you how to prepare those you are not familiar with yet.
